It’s a statement that feels particularly fitting as the cooler months roll in, bringing with them a craving for warmth, depth, and slow, considered dining. At the centre of this winter offering is a cut of beef that speaks to precision, patience, and craftsmanship: the Sanchoku Pure Wagyu Rib Fillet MB10+.
Described by Kristine as “the pinnacle of Australian Wagyu craftsmanship” this is not simply a premium steak, it’s the result of meticulous processes that begin long before it reaches the plate. Sourced from Queensland’s renowned Darling Downs region, the cattle are grain-fed for over 400 days, a commitment that translates directly into flavour, texture, and consistency.
With an exceptionally high marbling score, the Wagyu presents with a delicate, lace-like distribution of intramuscular fat – an intricate pattern that defines both its visual appeal and its eating experience.
“This cut delivers a signature melt-in-the-mouth texture,” Kristine said. “It has that intense richness and balance.”
As the steak meets the heat of the grill, that marbling begins to render, basting the meat from within. The result is a texture that is at once silky and structured, rich yet balanced – a rare harmony that elevates the experience beyond expectation. And this calibre of Wagyu has not gone unnoticed.
In 2025, it earned the Grand Champion title at the Wagyu Branded Beef Competition – Australia’s leading Wagyu specific award, hosted by the Australian Wagyu Association with more than 90 entries.
“Each entry is rigorously judged on marbling, aroma, flavour, juiciness, and overall eating quality to determine the nation’s best Wagyu beef,” Kristine said.
The judges’ feedback reads like a sensory journey in itself – one that captures the essence of what makes this Wagyu so distinctive. They praised the winning entry for its “caramelised grilled aroma, deep umami flavour, silky tenderness, and distinctive buttery popcorn notes – qualities that together define an ‘unparalleled Wagyu experience’.”
Served with confidence, the Wagyu is allowed to speak for itself. There’s no need for excess, just careful preparation, considered accompaniments, and an understanding that when the product is this good, simplicity becomes the ultimate luxury.
Available as part of a curated tasting experience or from the grill in 200g and 400g cuts, it invites diners to savour it at their own pace – whether as a refined introduction or a full indulgence.
