Lem Miller, Bandita’s bar manager, embodies this spirit, bringing his own unique perspective from his hometown. “I’m from a small regional town called Jaguito, which is on the Pacific coast of Panama in Central America,” Lem shares. “What I love about working at Bandita is we have the perfect blend of authentic Mexican flavours, a world-class location, and a superb team focused on creating amazing experiences every time you visit Bandita. There are not many places in the world that have the unique view we have – from glorious sunsets to full moon reflections on the Noosa River. Absolutely incredible.”

His passion for the restaurant’s setting and culture elevates the bar experience, making every cocktail a celebration of place and connection. “That diversity is our strength,” Amy says. What unites them is a shared love for hospitality and a desire to be part of something meaningful. Regular training sessions, led by Amy and Jason’s 15 years of Mexican restaurant experience (including Jason’s founding of Melbourne’s Mamasita), nurture this passion. From tequila tastings to menu deep-dives, they don’t just build knowledge – they inspire confidence that ripples into every guest interaction.

Monthly Bandita Familia Dinners are a highlight, where the team gathers to share stories over shared plates. “People talk about food from their childhood, favourite flavours, home,” Amy says. These moments strengthen bonds, creating a support network that translates into seamless service.

This attentiveness makes every visit special – guests celebrate milestones like anniversaries, then return for laid-back taco nights, drawn by the same welcoming energy.

Bandita also honours its Mexican-inspired roots with a creative twist. “We’re not traditional – we’re inspired,” Amy says. Even staff without prior Mexican food experience are welcomed, as long as they bring curiosity. “Passion goes a long way,” Amy notes.
