The story began back in 2009, when founders Pam and Gordon Thomson established a compact kitchen in Noosaville.

Since the 2024 price spike, when the cost of cocoa reached an all-time high, some mass-market producers have lowered cocoa solids in pursuit of profit. Noosa Chocolate Factory has chosen
a different path. Its dark chocolate contains a whopping 70 per cent cocoa solids, while its milk chocolate contains no less than 36 per cent. By contrast, other brands of dark chocolate currently seen on supermarket shelves can sometimes contain as little as 45 per cent cocoa solids, while milk chocolate can go as low at 20 per cent – the legal minimum for something to
be called ‘chocolate’ in Australia and New Zealand.
For consumers, this distinction matters. Chocolates with lower cocoa content rely more heavily on sugar, milk and flavourings to achieve its taste. Meanwhile, chocolates with higher cocoa content, like those produced by Noosa Chocolate Factory, offer a richer, more intense, and more complex flavour while containing less sugar and other unnecessary fillings. Plus, higher cocoa content comes with the added benefit of increased antioxidants.
Research has shown that the antioxidants in cocoa have a number of positive health effects and can lower your risk of stroke and heart disease, balance your immune system and improve brain function. Not that we need an excuse, but clearly chocolate rich in cocoa solids is an ideal choice for health-conscious people who still want to indulge.
Noosa Chocolate Factory’s products are also 100 per cent palm and vegetable oil free and contain no artificial preservatives. They go out of their way to incorporate local produce like ginger and pineapples as well as decadent Australian-grown nuts such as macadamias, almonds and hazelnuts whenever possible – and most ingredients, like the marshmallows contained in their famous rocky road, are made in house right here in Noosa.
On top of ensuring that raw ingredients are sourced from organic and sustainable farms and suppliers, they also actively work to promote fair trade agreements, ensuring that farmers and workers are treated with dignity and respect and are fairly paid. Plus, they continue to invest in energy-efficient solar powered production methods so as to minimise their impact on the environment and ensure that future generations can enjoy a better, greener future.
