Sardo Summer Flavours at Sardo Noosa
Summer and Sardinian food? It’s a match made in culinary heaven! Rebecca Jamieson Dwyer discovers the best things to sample and sip at this authentic riverside restaurant.
A relaxed ambience, striped cushions, fresh, flavoursome menu, and live music: Sardo has brought authentic Sardinian hospitality to Noosa, and there’s no better time to experience it than during these balmy months when sun-drenched afternoons stretch out into sun-kissed evenings.
Summer at Sardo also brings a few headline acts: standout dishes and drinks that are on high rotation and feel tailor-made for lazy days by the river.
On the mains front, co-founder Danny Isaac says there’s been one dish in particular that’s been stealing the show.
“Our Sardinian fish stew is an unforgettable combination of fresh prawns, calamari, mussels, barramundi, and Moreton Bay bug simmered in a rich bisque,” he enthuses. “We seal it with a pizza-dough base and bake it, then we cut it open in front of the customer and this whole steaming, beautiful fish stew sauce comes rising out.”
If you think that sounds impressive, wait until you experience the theatre and the flavours in real life.
It’s officially designed as a single-serve dish, but in true Sardinian style, plenty of diners can’t resist sharing.
“We love seeing people do that,” Danny says. “You break the bread, you scoop up the sauce… it’s a whole experience.”
In a place where fresh seafood shines, thanks to the Coast’s generous access to local prawns, snapper and daily catch, it’s easy to see why this one’s become
a summer standout.
Another exciting addition to the menu can be enjoyed as both an aperitif and a dessert, depending on what you’re in the mood for – a frozen cocktail based on your classic espresso martini, featuring all the flavour with none of the pesky caffeine.
“We created our Sardo Frozen Espresso Martini about three years ago in our Sorrento restaurant,” Danny shares. “People loved the idea of an espresso martini after dinner, but they didn’t want to be awake all night from the caffeine. So we thought, right, let’s fix that!”
The result is a decadent, creamy, icy treat that’s just crying out to be enjoyed on a steamy summer’s day.
“The coffee taste comes from Kahlua, so there’s no actual coffee,” Danny says. “It’s simply Kahlua, vodka, Frangelico, and then this powdered creamy mix that helps it freeze beautifully.”
You’ll find it on both the cocktail and dessert menus – a little two-in-one treat for those who like their sweets with a splash of something spirited.
“It’s already been a big hit,” Danny says. “As it gets hotter, anything frozen just takes off.”
While Sardo’s Noosa home shares a coastal thread with its original Sorrento location on the Mornington Peninsula, also owned and managed by Danny and his business partner Stefano, the two restaurants have evolved differently.
“Here in Noosa we sell a lot more seafood,” he explains. “It’s the climate, the location, and the quality of the fish we can get. The snapper, the prawns, the mullet – they’re unbelievable compared to what we get in Victoria.”
In Sorrento’s cooler climate, heartier dishes tend to shine, whereas Noosa diners are all about freshness.
“It’s almost opposite worlds,” Danny says. “In Sorrento, slow-cooked dishes do really well, especially in winter but here they’re just too heavy.
“People want light, summery food, and we love building our menu around that.”
Danny’s favourite way to experience a Sardo summer?
“It has to be a chilled glass of Vermentino (a crisp, aromatic white) alongside a flavoursome seafood dish such as the Prawns Bruschetta or the Lobster Burrata Ravioli,” he says.
“On a warm Noosa evening, with the river catching the last rays of light, it’s hard to imagine a better combo.”
Indeed! If you’re thinking ahead to the festive season, Danny offers a little teaser for what’s on offer.
“Christmas lunch will have its own special menu, and New Year’s Eve is a really big night for us” he says. “We usually have live music, and we do two sittings: an early one for families, and then one for those who want to stay on and have a more lively time.”

For now, summer is all about easy afternoons, fresh flavours, and those little moments that make a meal feel special, like cracking open an aromatic stew, raising a frosty glass, and discovering just how well Sardinian hospitality fits into the rhythm of Noosa.
