Life with Noosa Cartel is like having a celebrity chef in your freezer (wait, that sounds creepy) but fine dining from the convenience of your freezer is what you get with this local, family run business. Carlie Wacker uncovers the latest Noosa Cartel news as they get set to celebrate their first birthday. 

Josh Smallwood is the boss of Noosa Cartel and one of the greatest ambassadors for produce sourced from our region. With over 20 years in fine dining restaurants, he knows how to plate up a very special meal. And the people love them! Since launching Noosa Cartel 12 months ago he has cooked up more than 4000 restaurant-quality meals. 

When the former Head Chef at Ricky’s Noosa and his wife Danielle created the business, the aim was to offer people the chance to eat the finest fuss-free meals at home. Just like eating at your favourite restaurant but in your own home. 

I make sure I never run out of Noosa Cartel meals – my freezer is easy access to a luxe and convenient life. When I fancy a super special meal, I crack open the cartel compartment, pop my meal selection in boiling water for 20 minutes and serve up the high life on my plate. It’s always a great way to wow your friends and my circle of friends regularly serve up the Noosa Cartel for dinner parties as well as easy weeknight meals (life is too short to eat average food).  

On that note, there is something new coming our way – say hello to Cartel Catering – Noosa Cartel is bringing the party to your place. 

“If you are having a dinner party and don’t have the time to cook, we offer tailored dinner packages with shared meals and sides,” says Josh. “All you need to do is heat, garnish and serve.” 

Catering packages can be tailored to meet all dietary requirements for a minimum of 8 people with prices available upon request and with seven days advance notice required. All heating instructions are provided so you can sip on your sauv blanc and socialise while the business happens in the kitchen.

Cartel Christmas is coming in hot too! Festive favourites and some special sides are the best way to be with family ALL Christmas day rather than slaving over the stove. Imagine sitting down to a feast of Kingaroy Porchetta with fennel and sage or slow-cooked lamb shoulder with Pomona honey? How about roasted turkey breast with sage butter and Noosa Meat Centre bacon? 

Serve with traditional cranberry gravy and serve with pistachio and cranberry stuffing; roasted seasonal vegetables; potato bake with thyme and Kenilworth cheddar; duck fat potatoes; or quinoa, cucumber and chickpea salad with almonds and preserved lemon yoghurt! 

Don’t stress over dessert with Josh’s Cartel Christmas Pie – his own take on a classic Christmas pudding with stewed granny smith apples mixed with brandy-soaked fruit and topped with an Anzac-style pie crust! Drizzle with Josh’s adults-only spiked custard! Divine! 

You can also get your fresh Mooloolaba King Prawns from Josh with gourmet sauces to go! Order online and collect fresh (not frozen) dishes to simply heat and serve. The Christmas dishes come in a range of sizes to feed 4 – 12 people. 

So just when you thought life in Noosa couldn’t get any better here comes Noosa Cartel lifting the bar to the next level. Josh and Danielle are flourishing in the foodie scene and spreading the Cartel love with new stockists popping up everywhere including Pardons Fruit Market, Milk Bar and Providore on Hastings Street, Doonan Fruit Shed, Sunshine Beach General Store and Tewantin Market Garden.

They continue to champion and showcase the best in local produce such as Eastwell Farms, Noosa Reds, Pomona Honey, Kingaroy Pork and Mooloolaba Prawns. Having tried every dish multiple times I have my go-to favourites so I was interested in finding out what everyone else in Noosa is tucking into in front of the tele or when feeding friends and family. 

“Our top four meals since launching have been the Bali chicken curry, lamb shoulder, laksa and seafood pie” Josh shares “I have also made 200 litres of curry sauce which equates to feeding 1600 people.” Spicy! 

When I spoke to retailer Kimberley Emerson at Pardons Fruit Market, she said they can’t keep up with the demand for the curry sauces.
